As a race with Darkvision, someone probably has torches spare from their starting pack, and if not, they're only 1c each. Free action to light, action to catapult. Might be granted bonus fire damage, or at least you have a very illuminated target.
The problem with hurling torches is that they will likely get snuffed out. Most creatures and objects are not flammable enough to ignite with the type of instantaneous contact you are making with a catapulted torch and the speed with which the object is thrown through the air is likely to extinguish the lit part of the torch unless you can protect it somehow. The way around this issue is to hurl a few vials of oil first. Then hurl the torch. Unfortunately by that point, the combat is usually over.

Or skip the double steps and just hurl Alchemist's Fire.
That's been suggested. The issue w/ Alchemists Fire, I assume, is that it is a lot more expensive than flinging torches or oil.
