I ask because I want the demons heart, to give to our caster. Mostly as a bit of role-play silliness. I just don't know if the demon will disappear on death, or if the body stays, or if I have to get the heart while it's still alive? They are female demons. I think they are Erinyes. They have 2 arms. The fight has not started yet.
I never thought he body disappears, the spirit reforms in the lower planes.

In MM 2025 they say what happen when a demon and a devil die um material plane
Good catch, it is now in the statblocks of each fiend, how or if they are reformed... it is different for each fiend.
E.g. Bearded Devils do not reform...
That's a weird design choice; I took a look and it seems like they mostly just arbitrarily decided that anything with a DC of 3 or lower doesn't get a restoration trait aside from Lemures. Honestly, I'd just ignore that bit- all the typical fiends popping back to their home plane if they die elsewhere is part of what justifies them usually fighting to the death, among other things.

Officially, demons dissolve into ichor and reform in their home plane, but a DM can always rule otherwise.
Yeah, this is one of those "ask your DM" things. There's little to no RAW or other hard guidance on how monster pieces work in 5e.
Agreed, this is a world building question, each DM needs to answer for each world you are playing in.
