Isn't there an Epic Boon of Immortality? Perfectly rules-legal as written, just ... get to 21st level.
That said, immortality is obviously a huge thing in-character, but metagame-mechanically, it doesn't mean much. I don't recall ever seeing a character reach anywhere NEAR old age. Either they retire first, the campaign ends, or they snuff it in play.
monks and druids both stop aging once they get to certain level
Monks only cease to feel the effects of aging, but are still subject to it.
Druids age slower, which if you pick an already longlived race such as elves, means you extend your lifespand into the several thousands.
