I’m running a dungeon crawl right now and the players are mapping as we go. It sounds boring as heck, but it’s actually a lot of fun as they start to piece together the layout of the dungeon and figure out that the big holes in their maps are areas they have yet to explore.
And yeah, we are using graph paper. I draw things out on a mat so that there are no major mistakes.
The old-old-old-school way to do it wad to verbally describe the dungeon and let nature take it’s course as far as errors went. It could lead to some hilarious screw ups. This is actually a fundamental part of the game in a dungeon with moving parts (literally) or magical rules that defy physics -like walking off the left side of a video game map and appearing on the right side of the screen type of stuff), or entering some rooms from the north makes the ceiling the floor, but entering from the easy puts PCs on the regular floor. There’s a MASSIVE potential for creative problem solving in dungeon crawls that I’ve rarely seen in a plot point driven game.
I doubt a single person reading this thread has had a full gallon of water to drink in a single day in recent memory. A waterskin in the PHB holds 4 pints and weighs 5 pounds (when full, presumably, so 1 pound of skin and 4 pounds of liquid). A waterskin/day is probably a more manageable thing to track, rather than a gallon (although Create or Destroy Water is measured in terms of Gallons, bleh).
I mean, I don't drink a gallon of water a day, but I also sit at a desk in air conditioning in cotton clothes all day. If I spent the day wearing metal armor and running and fighting for my life, I'd probably be thirstier.
bell and string...but get more than 10 ft. of string...or just de-thread an extra rope...that'll give you several hundred feet of fibrous string. ...and get a couple extra bells too.

...pretty much any weekend day i do serious yardwork outside through September i can easily drink over a gallon of water in a day. I live in texas and you're talking 100-112 degree heat with significant physical activity... that's looking back ~5 months. ...usually in pants and long-sleeve shirt (at the most, otherwise shorts and tshirts)
looking back farther to my army days, also in the south...i could go through a gallon of water in an afternoon, with an obligatory bag of sunflower seeds to keep from passing out....that's with full combat gear....including gloves taped around my wrists to keep the fire ants from crawling in. I distinctly remember some days getting well into my 3rd gallon of water.
fyi, sunflower seeds = salt.
I suspect anyone that actually has to work outside in the summer goes through a gallon easily...anyone in construction or any manual labor job.

You'd be incorrect with that assumption. a human is supposed to drink a gallon of fluids per day...preferably water. I drink water/tea throughout the day. If you work-out intensely on a high level as I used to then you drink another half a gallon on top of that.

back to generic poster's comment...what are you doing when you don't quite reach a gallon? I suspect not 12 hours of spelunking with some combat scenarios thrown in where you have to fight for your life.
Approach going to the dungeon as an expedition. Have a goal, go in and achieve that goal, then get out unless you have time to set and achieve a new goal.
When prepping to explore a new area of the dungeon, first do a quick recon to figure out the general layout of the corridors and doors and map it - don't go into rooms or anywhere dangerous. Then for the next foray decide on some specific areas to explore.
This is all assuming it's a big dungeon you can get in and out of.
Don't assume everyone there is to be killed, even goblins or kobolds. Look to befriend a faction to get more information from them regarding the dungeon layout, which creatures are where, and where there might be good loot.
Always have an escape plan. If you end up somewhere you don't know how to get to the exit, then that becomes your priority. Formulate a backup plan if you are forced to spend the night in the dungeon - note good defensible places you can hole up.

Only on gym days. Which... is 1-2 a week. Vs, when younger. 5 a week with 2 days being 2x a day days.

Mage Hand: don't touch anything yourself if you can avoid it.
Purify Food and Drink: Ritual Casting and you can eat the Goblin you just killed.
Rope trick: save spot for a short rest, if you can find a room in the dungeon that is high enough.
