My friends and I are starting a new campaign. We rolled for stats I got 15, 14, 13, 12, 10, 9. I’m going for a knight theme, like the knight in darksouls, but any sub class is ok. We’re starting at level 3 so any powerful build for level 3 would be great
Ok, good to know! Fighters really only need two stats (STR and CON in your case) and your extra ASIs let you round out those stats or get some great feats. With a focus in STR, I'm going to assume you're going to wear heavy armor. It's up to you whether you want that 9 to go into INT or CHA (unless you want to be an eldricht knight which relies on INT). Depending on your subclass, you can pick the fighting style that best augments how you want to play. That said, let's start by picking a race and stats and work from there.
Human (Variant): You get +1 to two stats and a feat! You can start with 16 STR and 14 CON, placing other stats as you see fit. The best part is that you get a feat. Great Weapon Master is great for damage with two handed weapons, and the second half of the feat still works if you decide to pick up a shield. Sentinel and Heavy Armor Master are also notable mentions if you want to tank a bit more. Tough is always good for a melee fighter. So many options!
Half Orc: You get +2 STR and +1CON, which boosts your two main stats to 17 and 14 (or 16 and 16). Relentless Endurance (the first time you're downed you can choose to stay up with 1 HP) is great if you want to tank and Savage Attacks (extra damage on a crit) works really well with the Great Weapon Master feat. There's the aspect of some racism against half-orcs but it's sort of worth it for what you get. The half-Orc racial feat in Xanathar's is pretty good, too, letting you deal extra damage once per short rest while boosting your primary stats.
Half Elf: +2 to CHA isn't too helpful (especially if it's your dump stat), but you get +1 to two stats like the human. You don't get a feat, but the variants can be really cool if you don't feel like taking two extra skills. Half high elf or drow give spells you wouldn't otherwise get, adding versatility to your character. The half wood elf gets extra movement speed or increased ability to hide which, although doesn't increase damage output, is still pretty neat.
Now for subclasses... I feel like, based on what you said, you would have the most fun with Battle Master, or Champion.
Battle Master gives you maneuvers which adds versatility to combat. You prone enemies, give yourself or allies advantage, buff allies, increase damage, and more, depending on which ones you pick. All your maneuvers recharge on a short rest which synergizes well with the monk's play style. This means you can do more cool stuff more often
Champion let's you crit on a 19 AND a 20. This synergizes really well if you chose Great Weapon Master, letting you really make those bonus action attacks. It also increases damage (obviously) especially if you chose the half-Orc race. An additional fighting style is always nice, too.
The other subclasses are also totally viable, but I feel like you'd like these two the most. Let me know your thoughts!

I have a few questions to narrow down what build to go with:
I would like to play human, that includes the half humans as an option.
I wouldn’t mind playing the tank, but I’d prefer to deal high amounts of damage.
id like to be a strength fighter
in my party there is a monk, a sourcerer, a gloom stalker and me
