So I was making a fighter NPC for my game, and I realized something. He is at 8th level, so he does have Extra Attack. If he attacks, then uses his extra attack to Shove his target away 5 ft, could he make an opportunity attack and continue the cycle? Or does Extra Attack not apply to opportunity attacks?

A lich beholder could and would fight God. I desperately want to make it fight my players instead.
This does not work as you think it does, but not for the reason you think. When you have extra attack, you can make two attacks when you take the attack action. You can substitute one of your attacks to make a shove attempt, but when you shove an enemy it is forced movement and does not trigger an attack of opportunity. Furthermore, I'm not sure if I am interpreting your post correctly, but extra attack does not apply to opportunity attacks -- you still only make one attack with your reaction.
