I wanted to do a religious warrior/student of war type character that isn't a paladin so why not a cleric multiclass? The plan is to start as a fighter (for Con saves) and then do Forge Cleric 8 for some nice defence bonuses and Blessed Strikes. I might throw in a few levels of Fighter here and there to mix things up but I won't go higher than level 8 for Cleric.
The general combat strategy will be Spirit Guardians and Spiritual Weapons combined with weapon attacks or cantrips for some pretty good DPR. War caster a Crusher will probably be a part of the equation somehow just for some extra fun.
Now for the crux, what subclass of Fighter should I go for? The main contenders are Battle Master, Cavalier and Rune Knight. Neither of them conflicts too much with the action/bonus action economy and they all can fit in the theme. The downside of Cavalier and Rune Knight is that they're both reliant on Con which probably won't be a top stat. That said, what's your thoughts and opinions?
I would go with Eldritch Knight to get access to Booming Blade cantrip and Shield spell. Booming Blade goes well for enemies who wants to run away from your Spirit Guardians. Shield is an incredible spell and you will have the slots to burn thanks to Cleric.
Just a small sidenote: although more or less cheap, Spiritual Weapon is a meh spell that is widely overrated. Of course if you don’t have anything to do with your bonus action, it’s fine, but moving 20 ft per round is terrible, so expect to not make the most of it all the time.
What do you want out of the fighter dip? Straight forge cleric is pretty beefy. Certainly everyone can make use of action surge, but beyond that, are you looking for some little tricks to help you have options, or that second attack at level 5, or what?
Battlemaster is the most typical student of war subclass, but Cavalier might be a better choice for a front line cleric. You can potentially hold enemies nearby for Spirit Guardians with Hold the Line, though that could come online rather late if you are putting 8 of your first 9 levels towards Forge Cleric. There are lots of opportunities to limit enemies from passing you regardless using Cavalier, and that makes a lot of sense a front line cleric.

Basically I want more HP, more attacks and more ASIs. So more of the martial stuff in general. That, and also I'm not too interested in the higher level cleric stuff (at least not for this build). So yeah. Some fun fighter tricks to just be more fighter-y. :)

I haven't decided if I'm going with Fighter 1 and then straight for 8 levels of cleric or if I'm going to do a bit of mixing. I don't know if I will ever reach as high as level 18. If I can get 5 or 6 levels of Fighter and 8 levels of Cleric I'd be more than happy. When I think about it, all I really need is Cleric 6. Blessed strikes and 4th level spells are pretty much just to upcast Spirit Guardians and to make sure I can still do damage even against thing sthat are resistant/immune to non-magical weapons. Which Guardians and Spiritual Weapon would let me do anyway. :)
Rune knight could be fun. Embiggen and your spirit guardians radius gets even bigger. And you effectively get a couple new skill proficiencies and other tricks. Take a fire rune with forge cleric and just burn everything. I know you said you were worried about it being MAD, but you want con anyway if your looking at being front line. I’d see that as more useful than cavalier, which will really only let you force people to attack you unless you hit level 7.
