the wording seems kinda vague in this regard, normally features like this have a clause preventing an person like myself from using the same feature on the same target within an 24 hour timespan, but not here, so could i spend about 1-3 minutes to gain two pieces of information about my foe, then spend another 1-3 minutes to gain another two facts about my foe, then do so again and again spending several minutes trying to learn as much as i can about this adversary? would i have to at least use the feature on diffrent creatures between uses, or have these 1 minute meetings take place at least a few minutes apart?
Also for the purposes of determining class levels, if an monster stat block includes spellcasting and a specific caster level, should i treat them as being of that level for that class on top of any other class levels i have chosen to give it as to not give misleading information, in other words treating the acolyte as an 1st level cleric, the cult fanatic as an 4th level cleric and the mind flayer psion from volo's guide as being an 10th level "psion"?

Out of combat you can spend HOURS learning that information. However in combat REMEMBER that 1 minute equals 10 rounds.
the feature actively states that you have to be out of combat to use the abillity in the first place, so that will not exactly be a problem
