To that end, I need some help with establishing some House Rules specific to the various species in the PHB. I will likely be establishing a sister thread in the Home-Brewed section to cover this off.
Elves have the signature Wizard Bladesinger sub-class that is unique to them. Dwarves have the signature Barbarian Battle-Rager subclass. It is only fair that each of the core species gets the same treatment.
I want to create, or perhaps appropriate (appropriation is easier) a sub-class, to create a signature sub-class for each of the species in the PHB. Something that celebrates the uniqueness of each species, as each one is special in its own way. Now, because Humans and Half-Elves cover such a cultural range, it is problematic for those two. I have a hard time crafting Home Brew subclasses that are interesting and not OP. But I would prefer to do that over appropriation of an existing sub-class.
That being said, I have always believed that Battle-Rager is a far better fit for Half-Orcs.
I am thinking along these lines:
Halfling: Rogue or Bard
Gnome: Wizard, maybe a Rogue. (Artificer seems like a natural fit, but I find that class wildly OP in any campaign that have relatively scarce magic items, which my campaigns do.)
Dragonborn: Paladin, or some martial class
Tiefling: Sorcerer, Warlock (Pact of the Fiend seems like a natural fit)
Dwarves: Assuming the Battle-Rager is moved to Half-Orc, Forge Cleric seems perfect
I am looking to the creative minds out there that want recognize the uniqueness and beauty of the core species.
Now, in keeping with threads/ comments created by Third Sundering and Yuriel, I would appreciate it if comments were kept on point, and in the narrow focus of this thread.
I'd recommend building these subclasses around the specific lore of a world. For example, what makes sense in the Forgotten Realms probably wouldn't work in Ebberron.

Good point. I always forget that many people play Eberron, or other flavours. Let's say Forgotten Realms exclusive. I believe that Volo's cultural write-ups are derived from that point of view.
While not a martial class, the College of Creation from Tasha's is widely regarded amongst Dragonborn, whose songs they believe were performed by Bahamut and Tiamat.
Divine Soul sorcerer might be a good fit for Tiefling's due to their outer plane heritage
I do think the Artificer would probably fit the gnomes best, but if you don't want them to be able to make magic items, School of Transmutation sort of fits the magical inventor types
