What are the highest discounts you have seen? Also What sourcbook should I buy if im looking to get as many cool subclasses, races and spells for the dnd beyond character builder?
Cyber Monday is 1/3 off all books (or was, last few years - no reason to expect it'll be different this year). Best general player content sourcebook would be Xanathar's Guide to Everything, assuming you have the Player's Handbook at least.

The highest I have seen is around 30% to 40%. I think I saw 50% once or twice, but that might just be the 50% off from the Essentials Kit coupon.
If you want to save the most money and own everything, just wait until Thanksgiving/Black Friday/Cyber Monday and buy the Legendary Bundle then.
If you want the preorder perks too on top of saving some money and owning everything, then just wait until the two or three days before release to purchase the preorder books in case a sale happens between now and then. And once Thanksgiving comes around, just buy the rest of the Legendary Bundle then.
For the most player options, I recommend XGTE and TCOE. I also recommend VGTM for more race options as well. After that, I think all the settings books are pretty nice as well as they all have additional character options (races, backgrounds, etc.), items, features (piety, patronage), etc.
If you just want player options, don't buy the whole sourcebook. Just buy the player options. For about $50, you can get most of the subclasses, spells, and backgrounds from the Player's Handbook, Xanathar's, and Tasha's.
