My players are frustrated that sub classes, feats, items, available in some of the later books arnt available in the character creator. As i understand it, if we purchase these books through dnd beyond, said info will be available in the character creator. Can someone verify this please? Also, aside from the two everything books, what resources would be considered essential? Strictly for the purpose of character creation and management.
That's correct, provided you buy the book normally - not the compendium version. If anyone in the campaign has a Master tier subscription, all the content from all the books anyone has can be shared too.
Honestly, nothing's essential aside from the PHB. I'd consider buying some other things on a per-item basis first, rather than going for the whole book, unless you want so much from a book that the difference doesn't matter. If you want to buy the book afterwards, what you paid for the parts you bought previously will be taken out of the price for the whole book.

I preordered Fizban's Treasury of Dragons, but have skipped Strixhaven: A Curriculum of Chaos, Van Richten’s Guide to Ravenloft, and The Wild Beyond the Witchlight. That doesn't mean the items I didn't pick are bad, just not my kind of kink.
Also note that you can buy classes and races and other components of books piecemeal. If you look at a book in the marketplace and scroll below the book price you'll see you can either buy some subclasses or all the subclasses, same for races and spells magic items etc. This is probably a good option for folks who already own the physical book. For instance, I own Van Richten's Guide to Ravensloft in print. Rather than buying it on DnD Beyond I just bought the Gothic Lineages (basically 3 races) for $1.99 instead of the whole book for $29.99. The backgrounds and monsters I can homebrew eventually. Maybe I'll buy the classes someday if I don't homebrew them. But there's not much I need from that book mechanically in the Toolset since I can read all the "how to run horror" advice in the printed book I own.
The Xanathar's and Tasha's you may want to buy the whole book, though if you do start with piecemeal purchases, they're credited toward a full book purchase if you ultimately decide to buy the thing.,
EDIT: this could also be a way players can "buy into" the game by spending a few bucks on the options they want, rather than ~$30 for a whole book, and sharing the content under the DMs subscription (assuming the DM has a Master Tier).
