If you were a Tiefling Barbarian (Totem Warrior) and you rage, thus gaining resistance to all but Psychic damage for 1 min would that grant you immunity to fire damage or would you instead apply resistance twice?

Resistance and immunity does not stack.
Just as wearing two Rings of Protection will only give you AC+1, two sources of Resistance will still only reduce damage by half and not three-quarters.
No. Resistances from multiple sources do not stack or mean immunity. (Though, taking half damage from means other than resistance can. Such as a tiefling succeeding on a saving throw against fireball to take 1/4 of the damage.)
