Generally speaking, you are free to use whatever is in the Basic Rules free and clear. Beyond that, you should probably look to custom monsters that fill similar roles for monsters that you would like to use that do not fit that criteria. And yes, you should always credit folks if you want to use their custom monsters instead of makin your own.

The SRD, whether it's "interesting" or not (it's pretty dry), it is pretty essential reading for anyone seriously trying to publish 5e material. The SRD contents are what you're allowed to use in a non WotC project you intend to publish.
Not sure which Mord's you're talking about, but it's moot as nothing in either Mord's is in the SRD. So original creations it is.
Those notes are for a project you're planning on publishing independently or through a clearing house of independents like Drive-Thru RPG. If you want to produce and publish material for 5e _AND_ make use of the entirety of the MM, Mord's and Volo's, etc. you can produce stuff under DMsGuild. They have rules and restrictions too (no CR stuff, no Acquisitions Incorporated, a few proprietary characters, etc. also must be written for an existing setting or setting agnostic enough it can be plopped into any setting) but have much more generous terms as far as use of D&D branded content than the strict SRD.
Every other legitimate 3rd party publishers abides by these terms.

If I were to publish an adventure what would be the rules for using monsters from other books?
Eg could I use a critter from mordenkainen or would every creature need to be custom made?
Do people need crediting (seems the right thing to do)
