So with the magic side of D&D getting a big boost with Unearthed Arcana coming out. Any chance we might get some God and Goddess based lore expansion content?
Cause I really love the interaction (or sometimes lack of interaction) between players, characters, the world and the Divine. Sadly for a lot of the lore you do have to go back into the older editions (namely 3 and 3.5) for most of it. 5 and 5.5 seem to have very little to give about the gods other than a sentence of description their Domains and their Symbols. I would really like a deeper dive into the Divine of D&D.
We're unlikely to get stuff dedicated specifically to deities given they vary so much between settings. We got more information on the Faerun pantheons in the two FR books. More god stuff is likely to come with future setting books
Deities are (relatively) setting-specific, so we will tend only to see much discussion of pantheons in sourcebooks for the relevant setting. There was actually a fairly big section in the Forgotten Realms: Heroes of Faerûn book. (The recent Eberron book didn’t include anything more than a few brief mentions, but it was quite a slim book and they seemed to be trying to avoid duplicating the Rising from the Last War book.)
I’m going to echo everyone else and say that a book just for the various pantheons seems unlikely. Now a book for divine themed player options that updates the remaining Cleric subclasses from the 2014 PHB on the other hand could work
Theros has a really deep dive into the gods there. Otherwise, as others said, gods are very setting specific, so it wouldn’t be a gods book as much as a chapter about the gods in this particular world. Heck, if they do release a Dark Sun book as expected, that world has no gods at all.

The OP was asking about gods, and Theros does a really deep dive into the gods in that setting. I’d go so far as to say it’s done with more depth than any of the other settings, which makes sense as they are arguably more integral to the setting than in others. I thought it was worth calling out if they are looking for something with a high level of god-lore.
Probably not. All there is to know about the gods in this cosmology is in the DMG. There are probably new 5.5 adventure modules like Heroes of Faerun, that glosses over the gods. But that is just from that adventure world's point of view, not core in anyway.
If anything, I suspect the new Developers will continue to stay away from digging too deep in gods, and stick with monster gods like Tiamat and Lolth, as well as the various Arch Devils and Demon Princes

The list of gods in the DMG is for Greyhawk, so no more core than the rather more detailed descriptions of the gods of Toril in FR:HoF. I don’t think there really is a “core” set of deities, though some pantheons, as you say, like the Dragon gods (see Fizban’s Treasury of Dragons); the Giant pantheon (see Bigby’s Glory of the Giants) and the various powerful fiends seem to be conceived as potentially existing across many settings.
