Ok, so rules as written, you can change your look however you want, but you can't edit your cloths. However, could I alter my body to make it look like l'm wearing cloths, like a shirt, pants, dress, hat ect?
I ask because l heard someone describe the changeling as "Basically mystique (from X-men)" and she can "make" cloths, so l wondered if changelings could too?
probably not because no humanoid can. that's what Shiftweave is for.

Trying to get your physical content on Beyond is like going to Microsoft and saying "I have a physical Playstation disk, give me a digital Xbox version!"
But if I adjust my height and weight, let's say I wanted to be big and green and swole looking, I'll either need a tailor and maybe an armorer to accommodate my adjustments, or did I just turn my pants into tattered shorts Hulk style?

You could, indeed, burst out of your shorts, Hulk style. Sort of.
5e is not exactly strict about item sizes. Medium armour fits both dwarves and Bugbears. Mechanically it's one size fits that whole size category.
So if you have medium clothes, any medium equipment will be, RAW, just fine. But your DM may step in and have some pants bursting consequences depending on the minutae of the situation.
For the question about changing into a shape that "looks like clothes"... I'd say that it may be possible to have something that sort of ressembles clothes but wouldn't hold up on close inspection... I mean clothes are usually made from fabricated materials and have a certain texture to them which would be really hard to replicate with with things like skin, flesh and hair... Not to mention how clothes usually hang off of your body where as parts of your body which appeared liked clothes would have to be attached to you somewhere..
Not to mention... imagine have your shirt be part of your body.. then someone grabs holds of it or something.. uff...
I can see it working if you had a top layer of actual fabric to grab people's attention and then sort of had a skintight suit of pseudoclothes underneath which could then change color to help change your overall look.
well, for changelings (at least on Eberron) their appearances are like an art to them, so some of them would put in the effort to make it as realistic as possible, like using their hair to make the texture and materials of the clothes, now obviously a person who works with clothes could probably tell the difference. so yeah... Also, you could have the "clothing" attached by microscopic fibers so that people could interact with it. all up to your dm I guess.

You could have skin tight body paint? But for the rest, Glamor Studded Leather Armor functions.
