The thing is, I have an online campaign and players that joined it to create their characters.
Because of "real life" reasons, one of the players cannot play anymore and I'm searching for a substitute ... but ... how can I change the player on a character sheet so the new player can view, edit and use that character?
Is retiring the character and letting the new player play one of their own making not an option? I'm not sure if I was a new player to a group if I'd appreciate being given a second-hand character to play.

It's a short game, so no. It's not an option.
And it's not unusual to do that "there" ... I play in online forums dedicated to play-by-post games. It's not unseen that players abandon the games, be it because they lose interest in it, or because Real Life intercedes. When this happens, there is a special place in the forum dedicated to petitions for "substitute players" to take the orphan characters.
So the new player already knows he will adopt a dwarf fighter et all.
If someone isn't interested in adopting orphan characters, they shouldn't be in that part of the forum :P

-Roll 3D6 for stats. In order.
You would have to ask the player that's leaving to unassign their character. Then a new player can join and claim that character

(Un)fortunately you can't force-unasign a character. Your best bet might be to just copy the character manually.

Just have the new player make a new character and use the old as a mold
Or make a copy with the copy feature!
