I’ve been wondering for a while what Dragonborn Champions really are. Are they races, classes, or feats, that a dragonborn would get? The Dragonborn of Sardior looks like a ruby dragonborn. The Dragonborn of Tiamat looks like a dragonborn I’ve never seen, but maybe it could be a blue dragonborn. And the Dragonborn of Bahamut is clearly a gold or brass dragonborn but with platinum wings. It isn’t a platinum dragonborn though. It would be nice if I could know if they are a race or something else.
They're a race (the one that matches their patron deity) plus the NPC equivalent of a class, as is the case with all NPCs.
The dragonborn of tiamat is one possible way a blue dragonborn could look, however being chosen by tiamat means their breath weapon has changed.
The dragonborn of bahamut is could be one way a brass or gold dragonborn could appear, but their wings are platinum because they've been gifted them by bahamut, the platinum dragon.
The dragonborn of sardior is a dragonborn that has taken on a more ruby like appearance from their blessing by sardior, the ruby dragon.
It's also important to remember that not all dragonborn champions look that way and they can look very different.
So it’s a gift, and would be best represented by a feat? Or a race. I’m still confused because you said a race but then you said that those are all regular dragonborn who have been gifted powers by the patrons.

None of the above. They’re not for player use. They’re monster statblocks to serve as enemies or allies run by the DM.
I know. But supposedly what would they be best represented by (for homebrew). That’s why I’m asking.
