I noticed the new one, shadows of the dragon queen, added a race and subclass. Are there any other ones that add these? I don't have many of the adventure books as I tend to homebrew questlines and a setting for my players, but I noticed this one added some things.
On DDB? I'm not sure they do. The ones I checked never had the option to buy the race or subclass individually, which suggests they wouldn't be part of the book. Even Shadow of the Dragon Queen - what race and subclass does it add?
As for physical books (most of them have the option sold from a different book), I know that Rime of the Frostmaiden has Goliath (available for free on DDB in EECG) and Wild Beyond the Witchlight has the Fairy and Harengon (which are both for sale under Monster of the Multiverse).

It's sort of moot up for stuff prior to Spelljammer. Pretty much every race I can think of that appeared in an adventure, and there aren't that many, appears in Monsters of the Multiverse, so if you have that you're pretty much set.
Spelljammer isn't the first of it's kind like that - Owlin from Strixthaven aren't available either. I don't know if there are others. Both are mixed adventure/setting books.

You're right, I think because Strixhaven was supposed to come out within weeks of the MMM release, though MMM got pushed back a till after the holidays. MMM sort of "consolidates" races as well as updates them, and their original release plans indicate they were likely in development in parallel time frames.
Shadow of the Dragon Queen, if you click "read more" in the product advert says it'll have the Kender and the Lunar sorcerer. Plus the Knights of Solamnia and Mages of High Sorcery options, at least the backgrounds (presumably the feats will be in there too).
The other character option the OP may be missing are backgrounds. Baldur's Gate has quite a few, though most but not all of those are reskinned from the PHB.

Maybe because SotDQ is preorder that you can't buy individual options uet. Now you mention it, I remember the announcement saying about the Kender and the Lunar subclass.
