When I share the Spelljammer sourcebook with players in my campaign, there is no option to share the adventurer's guide only. Does that mean players have access to Boo's Menagerie and Light of Xaraxis?

That is correct, Spelljammer: Adventures in Space is a single product on the system and so has a single content sharing toggle
