Mainly items and spells specific to each adventure book. You can go to the marketplace and check the books to see what items, spells, and whatever else comes with the book.
At a quick glance and my minimal familiarity it looks like just about random campaign/adventure specific backgrounds and possibly subrace variations? Looks like the sourcebook bundle includes just about every publication i know of that introduces subclasses, spells, and other new variations to races. If you're just looking for creation content, sourcebook would definitely have you covered. Everything extra in legendary appears to just be published adventures/campaigns. I'm not too familiar with every magic item in the game so i don't know if any/how many were introduced in the various adventures.
What would I be missing if I got just the sourcebook bundle instead of the legendary one? Items? Spells? Subclasses?

The only things are:
-Module specific items
-Some module specific backgrounds
-Module specific monsters.
-And of course, the adventures.
Subclasses, feats, races and spells are covered in the sourcebooks.
