This seems like a no-brainer to me. Why wouldn't a rogue multiclass into 2 subclasses of the class their stats are already perfect for. Imagine a Swashbuckling Assassin, a Mastermind Thief, an Arcane Trickster that is also a Soul Knife. There is a lot of fun just hanging out here waiting to happen.
How do you multiclass? If you got a new subclass for every level, that would be OP. If you had to redo the levels 1-3, that would weak sauce because you're not getting anything new for 2 levels.
5e has been built for allowing getting multiple subclasses within a single class.
