Curse of Strahd is going to be your best bet - set on the horror plane of Ravenloft and designed for levels 1-10, you’ll be fighting undead aplenty. If you want even more undead encounters, you can easily slot them in - random ghoulish attacks would feel quite at place in Ravenloft.
Necromancer, after having revived the rag-tag group of adventurers, in order to get them to do his (surprisingly noble, for a Necromancer) bidding: "So, you're probably wondering why I brought you all here today..."
...And that's how you can start up a unique adventure. You can even have a bit of fun, by asking each of the party members how they died. Bonus points, if you're playing with a bunch of veterans, who want to have some excuse to dust off some of their previously un-alived characters. Party Member gets half-eaten by a dragon? Drag the other half back to the Necromancer. The party will probably be berated, but guess who's got three thumbs, and is now a half-minotaur?

just a quick question to ask after a pre-made adventure, level 1 to whatever, for much Undead and Ghoulish adventures?
