I've played all kinds of Gish, and the most effective (but not the most fun) is the GWM hexblade. Just because of the Armor of agathys and Shadow of Moil spells, it already puts it ahead of the rest. But it is also that it has many great Eldritch invocations for a Gish. Is the best. But as I said, it's not the most fun for me. It even bored me a bit at the end of the campaign. The Armor od Agathys + Shadow os Moil combo is so powerful, that you are going to use your spellslots for that and nothing else. And then hit and hit, doing a lot of damage, and being very difficult (and expensive for the damage you deal back if you get hit) to hit.
The Bladesinger is very good as a character, but at mid/high levels he's going to work better as a "traditional" wizard than a gish. As gish you are going to use it to clean the remains and little else, since when you play the neck it is more effective casting spells (like any other wizard). The Bladesinger was super fun to play throughout his entire career, since he's a wizard. You have tons of options, and since you can decide to go melee or stay back casting spells, it's very adaptable. Which makes it even more fun because you always have decisions to make.
Another very fun option, although it is not top tier in terms of optimization, was a Goblin sorcerer that I played in a campaign until level 10 if I remember correctly. The funny thing is that he hit with the booming blade, and walked away with the goblin's cunning action. But also, we made a very interesting team with a paladin with PAM and , and a twilight a cleric. The cleric because he created a zone of dimlight for my shadowblade, and the paladin because I retreated and if the bad guys came for me (since I was weak and juicy), he would hit them and they would get stuck. In addition to other combos that we did quite fun. But really that build is not one of the best gish.
My personal favorite type of "Gish" is a Githyanki/Githzerai graviturgy wizard multiclassed with a psi warrior fighter. (Mainly because of the lore implications, as Gish in the gith language means someone who is skilled in both "sword and sorcery" styles of fighting) However, I can't deny the fact that Hexblade and Bladesinger are great options on their own.
My personal favorite type of "Gish" is a Githyanki/Githzerai graviturgy wizard multiclassed with a psi warrior fighter. (Mainly because of the lore implications, as Gish in the gith language means someone who is skilled in both "sword and sorcery" styles of fighting) However, I can't deny the fact that Hexblade and Bladesinger are great options on their own.
I think the best might be sorlock. Weapon use based on charisma with the booming blade and green flame blade cantrips, spiritual weapon, and spirit guardians? Yes. In the dark, using shadow blade? Definitely yes!

I am in a dilemma between those

Rate them for what? A Hexblade runs very differently from either a Swords Bard or a Bladesinger.
