I want to use a Macbook for my dm tools and maps and give my players a single iPad that will be placed in the middle of the table. Maybe there are some apps or software where I can interact through my laptop and it will show maps with fog of war, and player/monster tokens on the iPad. maybe even there is an option where players can move their player tokens on the iPad themselves.
we still want to use dnd beyond as the main platform for managing rolls and encounters
No need for a single iPad in the middle of the table. Just use owlbear.rodeo and let everyone view the maps and move their tokens on their own phones and tablets. One of the players can also cast the map to a TV if that's convenient. That's what we do.
Encounter+ is really great. Supports battle maps and a fantastic line of sight/fog of war. Tons of other features and also links to DDB. You would have to use a subscription to allow players to access a website from each individual device. But it would be worth at least a look.

Try Owlbear Rodeo. Really simple, easy to use VTT.

Totally have the same problem. VTT are not iPad friendly. DnD beyond works great on an iPad, but not roll 20. Anyone use foundry with an iPad?
Owlbear Rodeo works fine on my Samsung tablet, I suppose it should work on iPad too.
