I am currently playing a minotaur drunken master monk and my party is in an area where werecreatures are around. We aren't sure of which ones are in the area, but know they exist from taking to some NPCs. We had a question about what would happen to a minotaur when bitten by one of these werecreatures. Any thoughts?
Yeah, you could ask the same questions of Centaurs, Leonin, Aarakocra, Tabaxi, etc ...
I can see why beings who seem chimerical half "beast" half "humanoid" may seem like a challenge or problem for lycanthropy, but rules as written there's nothing there but the rules. Even Warforged I think are afflicted by lycanthropy.
All that's said, there's nothing wrong with a particular table creating "complications" for lycanthropy applied to certain species if they think it'll somehow improve their games verisimilitude or whatever, and it's surely done, but "officially" there's no reason to do so in the rules.

I mean, your DM would be the arbiter, but for me I would just make him even more like a Bull, lol. or if I was in a really weird mood at you weren't completely against it, I would make you a full on werebull -- with an actual human form, the existing minotaur form, and a regular bull form.
In my upcoming game, however, that would be a kiss of death, as lycanthropy on that world destroys the mind, there is no cure, and eventually the lycanthrope has to be put down. It is a curse, iow.
In the game for the mainline rules, though, yeah, that's how I would handle it.
