Most of my PCs have been single class, I find it hard to justify why a character that has been adventuring in one class should suddenly find they have skills in anther class. I have however played 3 characters with a single layer dip, twice for cheese in west marches campaigns and once for character reasons when I was starting at level 9.
A hexblade 1 / Paladin X: Essentially I wanted ot take some of the MADness out of paladin
A monk 19 / cleric 1: As the capstone for monks is so weak I decided he "got religion" very late on (in his backstory a cleric saved him from slavery and helped him to become an adventurer)
An artificer 1 / wizard X: I was in a campaign where I played a fiend warlock who thought his patron was a celestial, not sure what would happen when he finally found out. It was revealed at level 9 and he felt unable to use magic from such a terrible source and needed to do all he could to get out of it. The nature of the campaign was such that he could not do so while adventuring. His backstory included a sister he was jealous of for being brilliant at everything and I thought it would be fun switch to playing her. A pure wizard didn't seem to match how I had described her, I did consider a level of fighter (she was good at martial combat) but decided artificer which while it didn't give her proficiency in martial weapons it did give her proficiency in armor at least and expertise in arcana really fitted her being brilliant.
So that is 6 classes I have used for multiclassing once and 7 I have never used so not sure how to answer (so left it blank)
As the thread implies, I'm curious about what your most popular class is for multiclassing, whether it's a dip or a scoop, and why!
