Will the new corebooks replace the old ones on D&D Beyond? Because I still want to use the old rules and The Forgotten Realms setting and I hear they're planning to change the default setting to Greyhawk. So, are they going to do what they did with D&D and AD&D being released separately being split between Greyhawk and Mystara? What I mean is will we keep the original books set in the Forgotten Realms along with the new ones set in Greyhawk?
If you have the old ones, then you almost certainly should be keeping them. Whether you can buy them after the new ones release is unclear.
As far as changing the default setting, that just affects the way the rules might be expressed and what adventures are released - your Forgotten Realms stuff is safe. We might just see more Greyhawk stuff in the future instead.

The default setting has been “the multiverse” for some time. Lots of adventures have been set in the FR, but actually recently, I think they’ve been kind of all over (literally with things like planescape, vecna, infinite staircase and radiant citadel) or setting neutral (Bigby, many things), or anthologies (Golden Vault I guess is in the FR, but it’s really designed to be able to plop down into anywhere).
As others said, greyhawk is planned as an example setting, but not the default. I don’t think anyone at WotC has said the word Mystara.
As for the future, they’ve been playing it pretty close to the chest. The only books they’ve announced are the core 3. What they do from there is anyone’s guess.
But, really, no matter what they do, you can just keep on playing in the FR. No one is going to tell you to stop, or be able to stop you.

I believe they'll have the new books and old books as separated by a tag

From what I’d gathered, Greyhawk was being used as an example in the new DMG to show how to design a campaign world.

Well, I don't own the books physically.
