So I've created a character. I've played an AL adventure (not digital) & now I want to level up & add the loot that I accrued. It keeps saying no dice have bee rolled. What am I doing wrong?
For the hit points, check the first page (the very first page, not the class page you land on from the manage character levels button) in the character builder and see if you have fixed or manual hit points selected. It is about the middle of the page.
For the loot do that in the inventory portion of the character sheet.
What do I want? Fixed or Manual? How can I buy stuff if it doesn't show the GP I earned. Sorry having problems transitioning from paper to digital
There's no shop interface for buying items, because the prices listed are just suggestions. There's an inventory section on the sheet itself where you can play around with your currencies and what items you have. If you're doing starting gold, you just roll for your amount, record it, and then manually pick out gear you want, subject to DM approval of course.

AL uses fixed HP. That should fix your "dice roll" message. Your inventory tab has a space to track GP. It's easy to miss. It's just below the Extra's tab. Click on it and you can track your gold there.
That's a personal choice. Fixed just means the software will give you the average die roll for your HP each level (+ - your Con modifier). Otherwise you roll but you could roll less than the average and then you are stuck with those hit points at that level.
