let used the example of the spell Alter Self now what can i do? can i be talking/joking/persuading someone. or focus on other thing that are not concentration spells like fixing something. how would you guys role play this
Your character is not concentrating in the "I stop, scrunch up my forehead, and reach out one hand" sense; it's more like remembering something you have to do later and your character is free to act normally. From the PHB:
Normal activity, such as moving and attacking, doesn’t interfere with concentration.
Mechanically, it just means you can't cast another spell and if you stop concentrating (voluntarily or by force), then the spell stops.
How you roleplay it is up to you. Personally, it depends on how many spell slots I have left. If I have slots left that are higher than the spell I'm concentrating on, it's a doddle and I don't struggle at all - I just have the mechanical restrictions of concentration. If I don't but I have spell slots left equal to the spell, then I'm showing slight strain. If I don't have spell slots equal to or greater than the spell left but I have plenty of lower level ones, then I'm showing significant strain. If it's my last spell slot left or if I have very few, then it's an overwhelming strain, I'm being exhausted. I then roleplay according.

You can cast spells while concentrating. The only spells that break concentration are other concentration spells and spells with a cast time of longer than one action (which require concentration to cast, even if they don't to maintain).
