This is purely speculation so don't take it as gospel by any means, but I'm doubtful. We'll probably have something similar to what we have in the current MM in the new MM. Maybe a bit more expanded? Hopefully, with some guidance on how to balance it in encounters.

i hope they take a look at all the 3rd party stuff made for transformations and see that people want more then "heres a stat block yea its kinda op and weak at the same time also your DM can just take your character away if they want"
I think they mean lycanthropy as official character options, no a DM discretion sidebar option. I don't see that or vampirism getting any more treatment in the new core than they currently have in the MM. Heck Pathfinder 2e, I believe just got around to a were- system for players in Howl of the Wild. It's difficult design to have a capital M Monster be an imposing adversary or the sort you could build a whole adventure or even campaign around, and then make it a player option as well. Many players want to play capital M monsters with the full monster power suite and that's really hard to place that in a character mechanic designed with gradual increments in mind (like if vampirism or lycanthropy could become monster classes, that might be something, but nothing you're going to see in a core).
Best someone could hope for, I think, would be a post core sourcebook equivalent of VGtR with some additional lineages or incorporation of templates into 5e.

The only way to get vampirism and lycanthropy as "official character options" is in lite-form with species like Dhampir and Shifter. Anything more involved than that does need to be under DM control.
Doesn't Blood Hunter have a subclass for it? Only semiofficial I know.

Do you mean lycanthropy? I can't imagine them publishing the new MM without werewolves in it, but we won't know for sure until next year.
