What if a loyal dragonborn fighter of Tiamat no longer wanted to fight for her?
I would create a barbarian dragonborn character and in the past his was a fighter of tiamat but has denied his loyalty to her. So I would like to know if in the 5th edition is possible something like this
Nothing in the rules stops this. Whatever consequences your character faces will be determined by the dungeon master (external consequences, such as cultists seeking revenge) and yourself as the player (internal consequences, such as struggling to find a new identity for yourself).
These are not questions folks on the internet can answer - every DM is going to handle this matter differently, so we cannot really predict how this character backstory might function at your individual table.
For a Cleric, Paladin or Warlock I would be concerned about ending a relationship with an evil deity. For a fighter though? Unless you are a warlord bringing the masses under her heel I doubt she would even notice. Tiamat is not known to be the most hands on in the parthenon.
For a barbarian it doesn't really matter in the rules department. Just have a chat with your GM and hopefully they can come up with something interesting for you.

For a Cleric, Paladin or Warlock I would be concerned about ending a relationship with an evil deity. For a fighter though? Unless you are a warlord bringing the masses under her heel I doubt she would even notice. Tiamat is not known to be the most hands on in the parthenon.
At the same time as the embodiment of most Evil dragon tropes, she's pretty covetous and doesn't lightly part with anything she's deemed as hers. Would depend on the circumstances still, but if they'd managed to even just peripherally get on her radar as a worshipper then she might demand they be smashed on principle.
I agree with most of the comments made. Most rules are usually up to DM digression and how you left things with that group.
However I would look at the personality of the deity itself, and maybe how historically things have been done when someone converts from one form of faith to another. Tiamat, being one of the Ur Dragons with all the personality traits of the chromatic dragons, is probably not too happy one of her possessions (you as a follower) decided to wonder off.

I always suggest players to discuss character backstory with their DM as some handle it differently than others with more heavy-handed approach.
