Depends on the spell. Raise dead specifically says the creature can’t have been undead, so that’s out. True resurrection specifically says it restore the creature to its pre-undead form, so that’s what it would do.
If you’re using some other method, you’d need to check if it has any similar language.
Did a quick check, and Reincarnate specifically requires a Humanoid body and Resurrection specifically precludes a creature that was Undead when it died. True Res or Wish look to be your only options for fixing undeath.
If a vampire was destroyed and then raised from the dead, would they return as a vampire or would they be cured of their vampirism?

Resurrection only works on the living who died. Not undead.
