If my race grants me a spell or cantrip, and my race allows me 2 cantrips or spells, does the quantity from the class get added to the race? So it would be 3 total cantrips, instead of the class 2, or does the cantrip I get from the race just count toward the cantrip total for the class?

The cantrip, or any other spell, you get from a racial trait does not count against the number of cantrips/spells you get from a class.

So I would get 1 racial cantrip + Class # of cantrips?

If your race gives you M cantrips and your class N, your total number of cantrips is M+N.
