By the name of the title, I'm talking about creatures from world mythology that have yet to be posted in official, and unofficial, content. As far as I've seen, which isn't as much as I would like to mind you, there are still creatures in world mythology that have yet to be tapped for D&D and other RPGs. Here I hope we can discuss creatures we know about in real-world lore that we would like to see more of in D&D moving forward.
In Celtic lore alone we have the Nuckalavee and Dullahan (Dullahan are found in Irish folklore); in Slavic culture, there are entities like the Zudaci (who probably could even act as the template for a class or subclass), Navia, and Leshiye. As of yet, I cannot recall encountering or reading about monsters/characters like this in any official D&D texts or homebrew works that have been posted online. It seems some Japanese and Irish entities of lore and myth have made their way into the official works, the Fomorians and Firbolg are both entities Irish lore, and the Oni are the demonic ogres of Japan.
That all said, many Evil dragons in the game and its many varieties of lore seem to have a few similarities to the Russian Zmei. But there are still creatures from all over the world that have yet to make a proper appearance in D&D, like Korea's Imoogi, in Korean lore (what little I've managed to gather up) the Imoogi is a great celestial serpent that after several centuries must claim a special treasure to mature into a dragon.

The REAL Tarrasque, from France, and maybe the Monkey King from China.

Sun Wu Kong, the Monkey King, he's one of the protagonists in A Journey to the West
