Looking at the players guide, I thought my Fighter with +1 Dex modifier would be able to add that to Breastplate's +14. In the book this is shown as "14 + Dex modifier (max 2)"; however, in D&D Beyond's character builder it only shows as an AC 14 with no mention of the +Dex modifier. What am I missing?

That might be a bug. I tried recreating this and the AC shows the Dex mod.
The armor has an AC of 14. You can also add up to plus 2 from Dex. This will be reflected in the overall AC not the AC of the Breast plate.

Your AC looks right. Its 16. 14 from the armor +1 for your dex and +1 for the ring of protection.

AC14 for armor, +1 for defense fighting style, +1 for Dex. You have a +1 ring but it's not attuned, so not being used.
Also, I think as you havesuch a high STR, you may as well get some AC18 plate armor, seeing as your Dex is only +1.
