I found a homebrew class for a Witcher in 5e, and I'm going to use the Folk Hero background for him, which allows proficiency in any artisan's tool of your choice, along with having a set of those tools in your inventory. I've decided to go with either alchemist's tools or brewer's tools, but need to know the differences and limitations between them. any help is appreciated.

Brewing is very specifically the creation of alcoholic beverages. Alchemy is more diverse; it's making various chemicals, concoctions and agents.

Brewing is mostly filtering, fermenting, or making solutions (tea, coffee, alcohol).
Alchemy involves more chemical reactions and occasionally magical substances (acid, antitoxin, alchemist fire, potions (non-healing)).
