Why do you want to read them/what are you looking to get out of them? I ask because you might get different recommendations depending on your end goal. There are multiple settings, that range over many years. (Setting/story years)
Basically, if you are looking to get a better understanding of recent lore (late 1400's) for your 5e games set in Forgotten Realms, a Dragonlance or Spelljammer book recommendation won't help much.
What would be good reading for 5th edition lore? I am particularly interested in anything that fleshes out the overarching cosmology and planar structures, dragon lore, and the feywild.
While it's not part of the 5th edition lore, the lore of Dragonlance (1980's Hickman/ Weiss) makes for some really amazing reading and some amazing characters. For a long time at LARPS I would use the stories from the "Tales" books as my own stories to perform and tell on "Stage". I will also say that if you're up for the conversion work, the 2nd edition materials that they co-authored are some of the best. Curse of Strahd is the reimagining of the original Ravenloft Module going back to those days.
And while they might not help with the canon 5th edition lore, they do a nice job of showing a diverse adventuring party with interesting backstories that compliment without confining.
Was thinking about starting to read the novels but don’t know where to start. Any suggestions?

Yea probably recent lore would be what I’m interested in

This might help. Anything from the 1400's would be recent from a lore standpoint.
