I just created a Blood Hunter Mutant and picked my mutagens, but I do know how to apply them. Do I have to manually edit the character sheet to apply the mutagen changes?
Temporary changes are not yet supported by dndbeyond. Like Mage Armor and other buff spells you will have to track them manually for the time being.
You can track the development of the "Temporary Effects System" in the roadmap of dndbeyond here:

Currently it's planned but for the long term.
