So I wanna make a caster that focuses on support through heals, damage mitigation, maybe some buffs/debuffs, but also wanna support though battelfield control spells, like mold earth to give cover, and walls and moving allies/enemies to get rid of a dangerous situation. What class, spells and other things would you reccomend for such?
Nah, it moves loose soil along the ground nothing about stacking or piling which would lead to cover. Heck soil under grass isnt considered "loose soil", so much of it is up to interpretation.
A hole however could be used as cover if you dive into it. So keep that in mind if you get caught out in the open.
Your DM could rule differently on the matter so take what I say with a large grain of salt.
Alchemist artificer is a pretty solid option, with a lot of support type spells and a boost to healing rolls. It's a little underwhelming in damage dealing compared to the other two subclasses, but is ideal for support.

Druid.
Mold earth doesnt build fortifications. You could dig a fox hole though.
Bard, especially Lore Bard.
I thought you could use it to move some in front of someone for at least 1/2 cover
Bards and druids default into support/control roles. Clerics and wizards can with a little specialization.
