I've been thinking about adding in a Dopplganger as a bartender. The idea is that after taking over the man's life for the past few years, the creature is now just living life and enjoying it. i thought of this after reading some comments on its monster page about how neutral it is.
The big thing you're going to have to deal with is how the doppelgänger came to be the bartender in the first place. There's also the question of just how much of the person they are able to duplicate. But I think if you get those two problem situated you should have a viable character.
I've checked the stat block. They can speak common and are only above average when compared to a commoner when it comes to power. So my thought-i'm writing this as i go- is to have the creature maybe become interested in a townsfolk, preferably a single one, and after some watching, take over their life.
As a bartender they'll have many mior interactions wit the townsfolk and travellers. Just enjoying the experience.
And if taking over a life is too difficult, maybe have the creature just just kill a rando in the woods and live as them.
Should the party not discover its true identity it may be able to appear later down the line. In bigger bars with better reputations, serving drinks to nobles and rich adventurers.
