I like to make some of my bosses in my character builders and I am trying to figure out when I am trying to make a boss fight can I use that character I made or would I have to make it in my homebrew to be able to use it in the encounter builder?

You can, but not in the same way you use a monster. If the character is part of one of your campaigns, you can include it by clicking on "manage characters" in the encounter builder. However, it won't show the character's stats like it would for a monster with a stat block. You would need to homebrew a monster if you want to see a stat block in the encounter.
