If there's one thing I've learned about Dragonborn in D&D, it's that they are a very strong, proud race of humanoids. How exactly would you run/play a cowardly or meak member of this race?
I'm not sure why playing a cowardly dragonborn would be any different from playing a cowardly human. What is it that you picture would be different?
