I am in a campaign where our group has picked up a dog. The dog was found with a dead halfling, the halfling had been riding it. Our DM gave the dog HP, strength, etc. The dog does have some equipment. We have the dog campaigning with us. Early warning system. Carrying items. So how can I write him up? His names Phydeaux.

The simplest method is to use the stats of a wolf.

Your DM should be the one to write him up, since the dog is an NPC.
WOTC lies. We know that WOTC lies. WOTC knows that we know that WOTC lies. We know that WOTC knows that we know that WOTC lies. And still they lie.
Because of the above (a paraphrase from Orwell) I no longer post to the forums -- PM me if you need help or anything.

I would think using Mastiff as as the stat block would be a better fit but same difference...
Or mastiff

Our DM has given us stats but I wanted to write the dog up like a character on a D&D Beyond character form.
Add a Mastiff or something to your Extras tab on your character sheet and customise accordingly.

If the companion were that capable, it would be in the GMs hands.
