But I think its outdated (I just noticed it doesn't really have mutagens.) Is there a more widely used one?
Could just use blood hunter... the mutant and ghostslayer subclasses are basically already a witchers.

Bloodhunter is probably your best option. Ranger is also good if you want to play the tracker, and Paladin is good if you want to play the holy (or unholy) man. Hexblades aren't a bad choice either.
