I'm looking for a Ranger subclass themed around moonlight and shadows. I can just reflavor some of their existing spells to use shadow and moonlight instead of the usual nature stuff, but I'd like one with night themed abilities. If anyone knows where I can find one, I'd really appreciate it.
Gloom Stalker sounds close to what you are looking for.
If you’re fine with losing a bit of weapon prowess, consider multiclassing a few levels into Twilight Cleric to get channel divinity and some moonlight themed spells. The main downside is missing out on Extra Attack for a few levels if you do this before level 5, which hurts.
Cool powers and I'll definitely keep that in mind, but it's not quite what I'm looking for. I meant something in the way of homebrew and the like, I tried looking myself, but it's crazy.
Why not make it yourself then. Homebrew is kinda difficult to learn if you don't already know. But in the dm guide, and on youtube you should get a decent idea of what to do. And if you dont want to learn feel free to dm me what you want and i can make it for you

If you have access to it, the Tome of Magic from 3.5e has an entire chapter on shadow magic that may help. The "Child of Night" and "Master of Shadow" prestige classes therein seem to be very closely related to what you're looking for. The latter is built around creating a shadow servant. I don't have a ton of time nowadays, but I've spent a lot of it in the past porting 3-3.5e material. If you put something together with these PrCs in mind, I may be able to help.

Not EXACTLY what you are looking for, but you may be interested in the new UA Lunar Magic Sorcerer. Has that flavor, but not a Ranger.
It'd make a good springboard, that's for sure. I'll keep looking around for flavor while I make a list of abilities I want it to have.

Indeed. Alternatively, the shadow companion could just be part of the effect of the spells.

I think they should've just used spells instead of the Mystery system, but it's cool, versatile, and embodies all the major shadow-user tropes.
