How do I turn a Spreadsheet into a proper roll table when creating Homebrew so that when I roll the dice it lists the result from the table rather than just the number?

Those “roll tables“ don’t actually do any of that on DDB. They’re just display tables. You must be using the Beyond20 browser extension, which is doing that rolling for you.
You can find some information about homebrew and tables in The General Homebrew FAQ #12. It doesn’t exactly answer your question, but it might help. How much do you know about html?
