I've got three questions about things I'm trying to figure out with regards to the homebrewing system here (specifically for subclasses):
Is there a listing of all the {} tags? Things like {level} that grab details off the character's sheet?
Is there a way to use the Level Scaling value from a subclass feature? I've got a feature I want to grant a bonus scaling from +1 to +5 over 9 levels, so I set up the Level Scaling on that feature, but I don't see a way to apply it to the bonus granted by the feature. Likewise (in conjunction with the previous question), is there a way to reference the scaling value in the feature's Snippet text?
Is there any way to create a subclass feature with several possible bonuses that can be easily swapped? I have one I'd like to give one of 6 effects chosen randomly after a long rest, and right now the only option I see would require players to go into the sheet editor each time.

To create a scaling feature, you can use the level replacement component, so that feature increases in power at specific levels. This also means that you don't need a snippet, as each replacement can state the specific bonus.

The closest that you'll find to that is something like the BattleMaster subclass, which allows the player to select from a pool of abilities. There's no random function for changing what abilities a character knows and, as you state, to change these abilities involves editing the character using the character builder. To create a "random" feature, I think that you would need to add the details of all 6 effects to the feature, relying on the player to roll 1d6 and remember which one is currently active.
Where is level replacement and how does it work? I've done a couple searches in the forums, but I'm not seeing any discussion of this.
As for the random bonus, I didn't expect one that would select the bonus automatically (it would be cool, but I'm sure it's not a common ask). I'm just wondering if there is a way to have a selectable bonus present a dropdown on the character's sheet for them to change the bonus easily. I know I can use the Class Feature Options, but those are only selectable from the character editor.

Actions on a feature have a Level Override option that does what you're talking about, but Modifiers on a feature don't have that option.
