Currently I have been running combat by having all monsters have a set initiative, so I will say this monster has 14 dex, so all of these monsters will have 10 + 2 initiative. This makes it a lot easier to start & run combat quickly.
I'll sometimes throw in 'special' monsters (like boss monsters, castors, etc.) at their own separate initiative.
I have found this to be pretty helpful personally, and I'm wondering what other people think of this 'style' of having groups of monsters all be at 1 particular point in the initiative order.

So a passive initiative variant. There is nothing wrong with that, and it certainly saves time.
Personally, I like more RNG. I roll for each monster's initiative, hp, and attack damage.
My players still roll so there is some randomness to it, but it becomes a matter of beating x score for them to go first
