For my campaign , at the moment i'm thinking of making 6 Artifact that have a soul of a powerful creature with them the Creatures are based on >CERBERUS >The nemean lion >One red dragon >A PEGASUS >A griffin > one base on Typhon from greek mythology
and at the moment i can't think of any ability from them apart being able to cover the wielder in a suit of armour
Artifacts are some of the most powerful items, so you would need to think about how strong you want these items to be. Considering you have the idea of each item containing the soul of a creature, you may want to start by giving the item some level of sentience especially for the items associated with Fenrir or the dragons. I like to use the section under Chapter 7 of the DMG for sentient magic items and artifacts to kickstart my thought process if I don't already have an idea of what the item does.
Here's a quick idea I had based on your items for the Red Dragon Gauntlets and Griffin Spear:
Gauntlets of the Red
Wondrous Item, artifact (Requires attunement)
These platemail gauntlets are coated in ruby red scales with claws protruding from the fingertips.
Sentience. These gauntlets are a chaotic evil sentient magical item with an intelligence of 18, wisdom of 15, and charisma of 23. It has hearing and darkvision out to a range of 120 feet.
The gauntlets can communicate telepathically with their wearer through strong emotions, such as fits of rage or unquenchable greed. It can understand common and draconic, but is unable to speak.
Personality. The soul of an ancient red dragon is consumed by lust for treasure and power. Whenever the wearer is near a large sum of coins or valuable item, the gauntlets will urge the wearer to take the coin or item for themselves.
While wearing these magical gauntlets you gain the following benefits:
Your unarmed attacks deal 1d8 plus your Strength modifier in fire damage.
You have resistance to fire damage.
You can cast Burning Hands at 3rd level. Once you have cast the spell in this way, you can't do so again until you finish a short or long rest.
If you are not wearing armor, your AC becomes 15 + your Dexterity modifier (max of 2).
Talon of the Griffin
Weapon (spear), artifact (Requires attunement)
A curved blade adorns the tip of this solid gold and steel spear, decorated with large feathers that appear to float on a unidentifiable breeze.
You gain a +3 bonus to attack and damage rolls with this magic weapon. The weapon has a total of 5 charges and regains 1d4 + 1 charges daily at dawn. While in a mountainous region or area of strong air elemental magic, it regains 1d3 charges after completing a short or long rest.
As a bonus action, you can spend 1 charge to gain a flying speed of 60 feet for 1 minute. While you have a flying speed from this weapon, if you move at least 20 feet in a straight line toward a creature and hit it with a weapon attack on the same turn, the target takes an additional 2d8 piercing damage.
Additionally, while you have a flying speed from this weapon and are making a weapon attack with it, you can spend 1 charge to gain advantage on the attack roll.
Those are some quick ideas I had that are likely not balanced, but usually artifacts are strong in comparison to other magic items. Feel free to use those if you like (I will probably add those to my own homebrew creations and share publicly) or my suggestion would be to use those as jumping off points for what you want to do with the items.

Random Properties: The Talon of the Stormlord have the following random properties: 1 minor beneficial property 2 major beneficial property 1 minor detrimental property 1 major detrimental property
Sentience. The Talon of the Stormload is a sentient chaotic neutral weapon with an Intelligence of 15, a Wisdom of 18, and a Charisma of 16. It has hearing and darkvision out to a range of 120 feet.The weapon communicates telepathically with its wielder and can speak, read, and understand Common and Auran
Spells: While the Spear is on your person, you can use an action to cast one of the following spells from it: Investiture of Wind , Control Winds , or Wind Walk. Once you use the sword to cast a spell, you can't cast that spell again from it until the next dawn.
