I googled around and took a bunch of stuff from various places. My girlfriend's son (9 yo) loves to hunt and fish between catching bad guys, so I needed to put together something on paper for me to use. This isn't overly complicated (no spoilage listed), but I think it looks okay.
So I think has far as your DC goes, it's pretty balanced and well thought out. My only critique I guess is that I know these are fish based on real life, which is great, however, for some people (and this may not be your gf's son) but they may want a more 'fantastic' kind of feel. So maybe creating your own fish that seem like they could fit into the D&D world would be a good idea. Lastly, when you roll a d20 to see what you catch, it seems like each fish is sort of thrown in randomly, when traditionally, the higher you roll the better the result. For example a roll of 1 gives you 2d4 meat, a roll of 16 gives you 1d4 mean, a roll of 17 gives you 2d10, and a roll of 20 gives 2d4. I would put any 1d4's at the bottom, then go to the next highest average result.
For your numbers, the average results are as follows:

Based on: https://www.reddit.com/r/DnDBehindTheScreen/comments/40mf1h/surviving_in_the_wild_huntingfishing_and_more/ (modified it a bit, and tried to simplify it a bit)

If anyone has any suggestions, let me know.
